With over a decade-long passion for serving Italian cuisine, James has already captured the hearts (and taste buds!) of Austinites and beyond. His restaurants, known for their in-house, made-from-scratch dishes, offer a fresh take on refreshingly modern, yet authentic Italian cuisine.

Executive Chef Cole began cooking at 13 in a family friend’s restaurant, driven by his father’s advice about the value of “undesirable jobs.” His early career with top chefs honed his skills and deepened his love for French and European flavors. Initially studying business, Fitzgerald worked full-time while pursuing his degree. The addition of a hospitality management major and a restaurant award affirmed his dedication to cooking.
Through experiences with local farmers and sustainable practices, Fitzgerald mastered techniques like fermenting and whole-animal butchery. His career soared, earning a Michelin Guide mention at 24. Now in Austin, Chef Cole seeks to advance the food scene, push culinary boundaries, and build a supportive chef community.
